Chicken Noodle Soup: My Healing Potion Recipe

There’s something magical about making chicken noodle soup from scratch. For me, it’s not just a recipe; it’s a ritual—a way to pour love and healing into every ingredient. This is the soup I turn to when someone in my home is feeling under the weather, and it never fails to bring comfort and nourishment.
Today, I’m sharing my take on this classic healing potion, one that’s packed with fresh herbs, warm spices, and a whole lot of intention.
Ingredients
1 organic whole chicken (or 4-6 bone-in pieces)
2 tbsp olive oil
3-4 cloves garlic, minced
1-inch piece of fresh ginger, grated
1 medium onion, diced
2-3 stalks of celery, chopped
A handful of fresh organic oregano (or more, depending on your taste)
Fresh herbs you feel drawn to: lemongrass, parsley, basil, thyme (washed and chopped)
4-5 carrots, peeled and sliced
8-10 cups clean water (filtered, if possible)
8 oz egg noodles
Salt and pepper to taste
Instructions
1. Prep Your Ingredients
Wash and chop all the vegetables and herbs. Take a moment to be mindful—this is where I like to think about the healing energy each ingredient brings.
2. Sauté the Base
In a large pot, heat the olive oil over medium heat. Add the garlic, ginger, onion, and celery. Sauté until the onion becomes translucent, and the aroma fills your kitchen.
3. Add the Herbs and Chicken
Stir in the oregano and any other herbs you’ve chosen—lemongrass, parsley, basil, thyme, or whatever feels right to you. Let the herbs warm up in the oil for a moment, then add the chicken. Stir the chicken around until it’s well-coated in the fragrant herb mixture.
4. Let It Simmer
Cover the pot and let the chicken cook for about 3 minutes, letting it absorb the flavors. This step is where the magic begins—imagine all the goodness seeping into the chicken.
5. Add the Water and Carrots
Pour in the water, ensuring it covers all the ingredients. Just before the water starts to boil, add the carrots. Reduce the heat to a gentle simmer, and let the soup cook for about 45 minutes to an hour. During this time, the chicken will become tender, and the broth will turn rich and golden.
6. Prepare the Egg Noodles
In a separate pot, cook the egg noodles according to the package instructions. Drain and set them aside.
7. Serve with Love
To serve, place a generous helping of egg noodles in a bowl, then ladle the chicken soup over the top. Be sure to include plenty of broth—it’s the soul of the soup and the warm embrace your throat needs when fighting a cold.

The warmth of the broth soothes the throat, the herbs bring their unique healing properties, and the combination of garlic, ginger, and onions fights inflammation and boosts immunity. But beyond the ingredients, it’s the care and intention you pour into making it that makes this soup truly magical.
